Pork Tofu with Black Beans

Tofu is a very good source of protein. Combine that with pork and you got a winner! My simple recipe for Pork tofu with black beans.

Ingredients:
 •one half kilogram pork, cut into bite size pieces
 •2 tbs cooking oil
 •7 pieces 2"x2"x1" tofu cut into bite sized pieces
 •1 tbs ginger sliced thinly
 •1 medium onion, chopped
 •5 cloves garlic, mashed
 •1 bunch fresh kinchay, chopped
 •2 tbsp black beans (tausi) rinsed well and drained
 •1/4 cup chopped spring onions
 •1 tbsp soy sauce
 •1 tbsp brown sugar (optional)
 •2 tbsp vinegar
 •2 tbsp oyster sauce
 •1 pc laurel leaf
 •1/2 tsp whole pepper corn
 •1 tbsp sesame oil.

Procedure:
 •boil pork in water for 20 to 30 minutes. Drain
 •Pan fry pork until golden brown
 •Fry tofu on a separate pan until golden brown
 •heat oil in pan. saute garlic, onions and ginger
 •stir in pork, simmer for 3 minutes
 •add black beans, soysauce and vinegar (do not stir!) simmer for 5 minutes
 •add laurel leaf, oyster sauce, brown sugar and pepper corn. Add water if necessary. simmer for 2 minutes
 •add tofu, spring onions and kinchay. simmer for 3 minutes. add sesame oil
Serve hot. Modify this recipe to your liking. This is similar to making adobo made fragrant with a little sesame oil. As with adobo, this dish tastes better when reheated. Enjoy :)
